The UN Food and Agriculture Organization (FAO) is launching a campaign in Latin America to promote the use of vegetables for better nutrition, FAO chief Jose Graziano da Silva said here Wednesday.
"This is the great challenge for Latin America and the Caribbean at the moment. We are on a good path towards food security, but we must now add nutrition," the director-general said at a FAO regional conference.
Noting that FAO has declared 2016 as the International Year of Vegetables, he said the campaign will also seek to promote the use of Latin American and Caribbean vegetables in other regions due to their rich nutritional content.
"Each country should identify the vegetables with the highest nutritional value and recommend them to the FAO so we can promote them," he said.
Vegetables are fundamental to the food security of poor populations. For example, in Mexico beans have shown high resistance to drought and serve as an important source of protein. Endi
